Champagne appellation law permits two pressings. The cuvée, the first fraction, is cleaner, more fragrant, richer in natural acids and sugars. Many houses blend both. Guerdon uses only the cuvée. This decision reduces yield and increases cost. It also concentrates quality into every litre of base wine that enters the cellar.
Bottle Ageing
The bottles rest horizontally in our cellars, in contact with the spent yeast cells, which slowly release complex compounds into the wine: brioche, toasted bread, cream, nuttiness. Enfant Terrible and Reine Rebelle mature for 36 months. Roi Soleil rests for a minimum of 72 months. In an industry where non-vintage Champagne is legally releasable after 15 months, these figures represent a deliberate choice.
